The trick here is using the baking process as rhythm instead of metaphor only. The arrangement rises slowly, folds back on itself, and opens up with the same patience the lyric keeps describing.
This one was written for Maui Wild Crust, a Maui sourdough bakery run with the kind of patience that makes “just check the starter real quick” turn into an entire household weather system. The song is affectionate because the subject is affectionate. Also because fresh bread has a way of making everyone briefly more reasonable.
